DOLCE GONDOLA is made in two phases: the preparation of a pre-dough followed by the final dough, ensuring long-lasting freshness and maximum softness. You can choose between a long fermentation recipe (approximately 20-24 hours) or a short fermentation recipe (6-8 hours). The dough is then baked directly in a wooden mold (made from natural poplar, which does not darken during baking).
DOLCE GONDOLA is sold in a KIT, containing everything needed to prepare, package, and present 50 "gondolas" of 250 grams each:
- 4.80 kg DOLCE GONDOLA MIX
- 1.60 kg DOLCE GLASSA MIX
- 50 WOODEN MOLDS, including custom-shaped baking parchment liners
- 50 TRANSPARENT BAGS for individual "gondola" packaging
