POLACCA DOLCE TRADIZIONE is an improved version of POLACCA DOLCE ORO that does not use the "usual" emulsifiers E471 and E472, yet still remains soft for a long time. For this reason, it can be declared with a "clean label".

Like POLACCA DOLCE ORO, POLACCA DOLCE TRADIZIONE is processed in two phases: first, a pre-dough (first dough), followed by a final dough.

Similarly, 3 recipes are available for POLACCA DOLCE TRADIZIONE: in addition to the standard recipe below, a quick recipe is available, allowing you to prepare a panettone in approximately 8 hours, as well as a "rich" recipe with extra butter and eggs.
