ESKMALT R12 is a malt extract widely used in baking, both for common and specialty bread, as well as for breadsticks, crackers, rusks, and similar products. It is characterized by a diastatic power of over 10,000 Pollack units.
ESKMALT R12 helps achieve a crispy, golden crust and enhances the flavor and aroma of the bread, especially in light and airy breads.
DOSAGE: 0.5-1% of ESKMALT R12, depending on the quality of the flour used.
