NO PROBLEM is an improver based on emulsifier E472e, designed for the production of both common and special bread with a high leavening power. It is the preferred choice due to its excellent stability during the leavening process in all conditions.
NO PROBLEM promotes a balanced and enhanced amylase process in doughs, improving both the leavening volume—resulting in a larger product—and the quality of leavening over long proofing times and in critical conditions. This translates into:
- High bread volume; excellent leavening stability, even with weak flour or ascorbic acid;
- Well-aerated and uniform crumb structure;
- Golden and appetizing appearance.
The E472e emulsifier used is a food additive that identifies mono- and diglyceride esters of fatty acids, mainly used in the food industry as an emulsifier. In bread production, it helps improve and stabilize the gluten structure. E472e has been considered safe for human consumption for many years.
DOSAGE: 1-1.5% of NO PROBLEM relative to the flour weight.
