MORBITOL is a coadjuvant for confectionery products with an important humectant function. It helps retain moisture, keeping products soft for longer. In other words, it slows down dehydration (moisture loss), preserving the fragrance and texture of the finished product over time.
MORBITOL also has a sweetening function and should be dosed by reducing part of the sugar in the original recipe.
MORBITOL comes in powder form, making it easier to dose and handle compared to similar syrup-based products. It is ideal for leavened products (such as croissants and brioche), baked goods (like plum cake), and soft cookies, including almond-based treats like petit fours or almond pastries.
DOSAGE: Use from 20% to 30% as a sugar replacement.
USAGE INSTRUCTIONS: Replace part of the sugar in a quantity similar to the MORBITOL added and proceed as usual.
