VIAMICROB is a powdered semi-finished product to be added to flour to prevent the development of molds and bacteria such as Aspergillus flavus or Aspergillus niger, as well as Penicillium glaucum, which can alter the final product.
VIAMICROB also acts as an excellent bacteriostatic agent against the common bread spoilage condition known as "ropiness" or "ropey bread."
VIAMICROB does not alter the taste of the final product and is suitable for both baked goods and confectionery products in general.
VIAMICROB can be used in various types of baked confectionery products as well as in the following types of bread production:
- Prepackaged bread in general.
- Prepackaged sliced bread and rye bread.
- Low-calorie bread.
- Prepackaged par-baked bread.
- Prepackaged rolls, buns, and pitta bread.
DOSAGE: For the bread types listed under point 1, the maximum recommended dose is 3 grams per 1 kg of flour (300 grams of VIAMICROB per 100 kg of flour). For all other cases, including confectionery products, the recommended dose is 6 grams per 1 kg of flour (600 grams of VIAMICROB per 100 kg of flour).
