BIANCA FATA UNIVERSALE is a dough improver based on dried starter, ideal for the production of all types of bread. It combines the benefits of traditional natural fermentation with the convenience of modern standard leavening.
BIANCA FATA UNIVERSALE replaces biga, old dough, pre-ferments, dough improvers, and enhancers. It can be added directly to the dough, enhancing the bread's aroma and crumb structure, even when using low W flours.
DOSAGE:
Use 1.5% to 2% based on the weight of the flour.
USAGE:
Add directly to the flour and proceed with the usual dough preparation.
