PUMPERNICKEL MIX is a concentrated mix, used at 50%, specifically designed to create a traditional German bread from the Westphalia region, made with rye flour. It contains type “1” and whole rye flour, enriched with sourdough from rye and wheat, as well as barley malt.
PUMPERNICKEL MIX is characterized by a compact crumb structure, an intense brown color, and a very distinctive taste—slightly tangy with a hint of lightly caramelized, roasted notes. Optionally, as done in some regions of Germany, seeds (such as sunflower, flax, pumpkin, caraway, dill, etc.) can be added to the dough to further enhance its flavor and nutritional properties.
