NO PROBLEM LECITHIN is an improver that uses soy lecithin as an emulsifier instead of the more common emulsifier E472e. The lecithin used is non-genetically modified.

Soy lecithin is an emulsifier extracted from soybean seeds through a chemical or mechanical extraction process. It is primarily composed of phospholipids, including phosphatidylcholine, phosphatidylethanolamine, and phosphatidylinositol. The lecithin used is GMO-free (not genetically modified).

NO PROBLEM LECITHIN is particularly suitable for dough refrigeration, delivering the following benefits:

  • Good bread volume;
  • Strong leavening stability;
  • Well-aerated and uniform crumb structure.

DOSAGE: 2% based on the flour weight.

PREPARATION: As usual.
