MORBIDEL is an improver that enhances the softness of the finished product and prolongs its freshness.
It can be used in the preparation of bread, leavened pastry products (such as panettone, pandoro, brioches), and baked goods where the use of mono- and diglycerides of fatty acids is permitted.
MORBIDEL should be added together with the other ingredients. No changes to recipes or processing methods are required.
DOSAGE: From 1% to 3% of the total weight of the dough or mass to be processed.
NOTE: None of the ingredients are derived from palm oil.
