MIGLIORPAN® 20 is an improver containing refined liquid lard and emulsifier E472e for enriched bread. The lard is incorporated using proprietary ThermoSpray Plus® technology, which optimizes fat dispersion both in the improver and in the dough, enhancing the lipid content. Proper leavening is further ensured by a special enzymatic blend, which provides volume and stability to the bread.
MIGLIORPAN® 20 is suitable for all types of bread, including crafted bread such as pane ferrarese, maggiolino, biova, and traditional loaves like tartaruga, olive bread, as well as soft pizzas, focaccia, and seasoned breadsticks. The recommended dosage guarantees optimal leavening, yield, and fragrance.
The presence of sprayed lard simplifies dosing for enriched bread while also working synergistically with the emulsifier, enhancing both the fragrance and aroma of the final product.
DOSAGE:
1 kg of product per 5 kg of flour.
