MULTI TECH is an improver based on the emulsifier E472e, recommended for the production of both standard and specialty bread. It is a versatile, universal-use improver known for its excellent quality-to-price ratio and its ability to stabilize fermentation.
The E472e emulsifier is a food additive used to identify esters of mono- and diglycerides of fatty acids, primarily utilized in the food industry as an emulsifier. In bread production, it is used to improve and stabilize the gluten structure.
E472e has been considered safe for human consumption for many years.
Recommended Dosage:
The suggested dosage is 1-1.5% of MULTI TECH, based on the weight of the flour used.

Bread produced and packaged with the addition of MULTI TECH must be displayed and sold with the inclusion of the following ingredients on the label: emulsifier (E472e), dextrose.
