A natural aroma derived from the aromatic compounds naturally released from the dried bark of the Cinnamomum tree, particularly cinnamaldehyde, eugenol, linalool, and beta-caryophyllene. Our proposed aroma comes in a gel form, also referred to as a paste or emulsion. It has a delicately dense texture that disperses easily in doughs, creams, and even mousses.

The proposed aroma contains no colorants. However, a colored version with non-AZO colorants is available for those who need to enhance the color intensity of their doughs or creams.

Cinnamon is a widely used spice in pastry making, thanks to its warm, enveloping, and slightly spicy aroma. It pairs perfectly with:

Baked goods such as cookies, apple pies, donuts, and gingerbread.

Creams and mousses, adding an aromatic touch to panna cotta, custard creams, and chocolate mousse.

Leavened doughs, enhancing the flavor of brioche bread.

DOSAGE: 2-5% of the dough or mass to be flavored.
