POLACCA ORO INTEGRALE is a balanced base of natural powdered sourdough that allows you to easily prepare leavened products using the long fermentation method. It is very similar to POLACCA ORO, a well-established base for festive leavened products, but differs due to the presence of whole wheat flour among its ingredients. This addition provides a baked product richer in fiber, with a darker crumb and pronounced softness.

POLACCA ORO INTEGRALE complies with the Italian Ministerial Decree of 22.07.05 for Panettone, Pandoro, Colomba, as well as other typical leavened products such as Croissants, Brioches, and more.

As with POLACCA ORO, POLACCA ORO INTEGRALE is prepared in 2 phases (doughs), but it is added only in the first phase, unlike many other similar products:

  1. The first phase includes the preparation of a pre-dough and its maturation through a slow leavening process of about 12 hours (with an increase of the initial volume by about 3 times). In this phase, a very small quantity of brewer’s yeast is used, necessary to trigger the fermentation (starter).
  2. The second phase includes the preparation of the final dough, its leavening, and subsequent baking.
