PALAMIX is a semi-finished mix designed to prepare traditional Roman focaccia, a delicious and inviting specialty. It is sometimes simply seasoned with olive oil and salt, but often filled with mozzarella, cured meats, and vegetables. It features a light, crispy crust and a soft, well-aerated crumb.

PALAMIX is made from soft wheat, semolina, rice flour, soy, oats, and barley. The dough is mixed and left to mature in the refrigerator for 18-20 hours. After proper proofing, it is stretched onto a baking peel and baked!

DOSAGE:

  • PALAMIX → 1000 g
  • Salt → 20-25 g
  • Extra virgin olive oil → 60 g
  • Fresh yeast → 6-9 g
  • Water → 750 g
