A blend of selected starches (corn, wheat, and rice) for preparing traditional hot pastry cream, suitable for cream cookers, pasteurizers, or traditional systems. Stable during cooking and freezing.
Many pastry chefs love making pastry cream with traditional ingredients. Typically, a cream is made with milk, egg yolks, sugar, starch and/or flour, and flavorings. However, the result is not always truly "creamy."
Our balanced base, made only of carefully selected starches in the right proportion, replaces "starch and/or flour" in the recipe, providing that delightful creaminess sought after by the most refined clientele.
DOSAGE: Typically, 100 g of CREMANA BASIC per liter of milk.
