MULTI LECITHIN is an improver based on soy lecithin as an emulsifier, instead of the more traditional E472e. It is a universal improver that ensures good crumb structure and supports short-term refrigeration for both standard and specialty bread doughs.

Soy lecithin is an emulsifier extracted from soybeans through a chemical or mechanical extraction process. It is primarily composed of phospholipids, including phosphatidylcholine, phosphatidylethanolamine, and phosphatidylinositol.

The lecithin used is GMO-free (non-genetically modified).

Recommended Dosage:

The suggested dosage is 2-3% of MULTI LECITHIN based on the weight of the flour used.

Warning:

Bread produced and packaged with the addition of MULTI LECITHIN must be displayed and sold with the inclusion of the following ingredients on the label: emulsifier (soy lecithin), dextrose.
