MULTI SINERGY is an improver based on the emulsifier E472e, recommended for the production of both standard and specialty bread. It provides a balancing effect, ensuring optimal fermentation even under challenging processing conditions and achieving good bread volume.
The E472e emulsifier is a food additive used to identify esters of mono- and diglycerides of fatty acids, primarily utilized in the food industry as an emulsifier. In bread production, it is used to improve and stabilize the gluten structure.
E472e has been considered safe for human consumption for many years.
Recommended Dosage:
The suggested dosage is 1-1.5% of MULTI SINERGY, based on the weight of the flour used.

Bread produced and packaged with the addition of MULTI SINERGY must be displayed and sold with the inclusion of the following ingredients on the label: emulsifier (E472e), dextrose.
