MALTS

Malt, available in both powder and paste form, is a traditional ingredient used in bread making and beer production. It serves as a source of fermentable sugars for yeast and also contributes to giving the crumb and crust a slightly amber color. Increasingly, these effects are achieved using enzymatic improvers.

Malt powder is obtained by finely grinding wheat, barley, or other grains that have been properly germinated and then dried. Malt paste is made from malted barley or other malted grains, which are then processed into a thick, concentrated paste.
