LE ZOCCHELLE is a special flour blend made from durum wheat semolina, designed to create small, slightly flattened rustic rolls (similar to “ciabattelle” or “ciabattine”). These rolls feature a golden crust, a soft, pale yellow crumb with a slightly airy yet uniform texture.

LE ZOCCHELLE also contains wheat germ, which is rich in essential nutrients. This addition enhances the bread with a distinct and intense aroma, combined with a uniquely inviting and flavorful taste.

USAGE DOSAGE:

  • LE ZOCCHELLE – 1000 g
  • Brewer’s yeast – 35 g
  • Water – approx. 700 g
