LEVEN+ is a dehydrated natural leavening agent that promotes proper dough fermentation, giving bread the characteristic taste and aroma of traditional leavening. It contains the necessary starter (dry yeast) to reactivate the natural leavening process, along with a blend of enzymes that enhance and optimize the volume of the baked bread.

LEVEN+ can be used directly in the dough or to strengthen your biga or preferment. No additional yeast should be added.

DOSAGE: 3-4% for direct dough, 0.5-1% for biga preparation.
